Hoppin’ John with Greens

Ingredients

  • 2 tsp canola oil
  • 1 cup coarsely chopped ham
  • 1 cup chopped white onion
  • 1 cup chopped red bell pepper
  • 1 jalapeño, seeded and finely chopped
  • 1/2 tsp cayenne pepper
  • 1 16-ounce package frozen black-eyed peas
  • 4 cups fresh greens, trimmed and finely chopped (mustard, collard, or turnip)
  • cups unsalted chicken broth
  • 2 cups cooked basmati rice ((Cook rice according to package directions))
  • Hot sauce

Instructions

  1. Heat oil in a large skillet over medium-high heat. Sauté ham, onion, bell pepper and jalapeño pepper over medium-high heat 5 to 7 minutes or until vegetables are soft. Stir in cayenne pepper and sauté 1 minute. Stir in black-eyed peas, greens, and broth. Reduce heat to medium, cover, and simmer, stirring occasionally, 20 minute or until peas are tender. Serve over rice and stir all ingredients together then top with hot sauce, if desired.
