Orange-Glazed Parsnips

Description

Get to know a new root vegetable: Parsnips! A delightfully sweet and citrusy side that will brighten up any meal!

Ingredients

  • 1 pound of parsnips (peeled and sliced)
  • 1 tbsp olive oil
  • 1 tbsp corn starch
  • 1 cup of orange juice
  • 1 orange (zested)
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 tsp rosemary

Instructions

  1. Heat olive oil in large skillet over medium-high heat. Add parsnips and sauté for about 12 minutes, or until parsnips are soft.
  2. Slowing sprinkle in corn starch, mixing as you go until corn starch if fully dissolved.
  3. Add orange juice, stir, and bring to simmer. Stir in orange zest, salt, pepper, and rosemary.
  4. Simmer for 5 minutes or until sauce is thickened.
  5. Serve and enjoy!
