Description

Thyme Roasted Tomatoes are roasted quickly in the oven with garlic, salt, olive oil and fresh thyme to create a simple side dish bursting with flavor and ready in just 10 minutes. 

Ingredients

2 pounds grape or cherry tomatoes

1 -2 Tbsp extra virgin olive oil

2 garlic cloves, minced

2 tsp fresh thyme leaves (about 5-6 sprigs)

1/2 tsp Kosher salt

1/2 tsp freshly ground black pepper

Instructions

  1. Add tomatoes to a large foil-lined baking sheet. Drizzle evenly with olive oil then sprinkle with garlic, thyme, salt and pepper. Toss gently. 
  2. Roast tomatoes at 425 degrees F for 10 to 12 minutes or until skin soften and begin to blister or split. Serve immediately or store, cooled, in an airtight container in the refrigerator for up to 3 days.

Notes

You can equally substitute fresh rosemary for fresh thyme for a flavor twist. Or try both!
