White Chocolate Cherry Oatmeal Cookie Pops

Description

White Chocolate Cherry Oatmeal Cookie Pops are a healthy Valentine’s Day treat for kids.

Ingredients

●  1 cup white wheat flour

●  ¼ tsp salt

●  ½ tsp baking soda

●  1 stick unsalted butter, softened to room temperature

●  ½ cup light brown sugar

●  1 large egg

●  2 tsp vanilla extract

●  1 cup white chocolate chips, divided

●  ½ cup dried cherries, coarsely chopped*

●  ½ cup old fashioned oats**

●  Striped, heavy duty paper straws

Instructions

  1. Preheat oven to 350F.
  2. Whisk together flour, salt, and baking soda in a medium bowl.
  3. Mix together butter and brown sugar in the bowl of a stand mixer for about two minutes until mixture is light and fluffy. (This step may also be done in a large bowl using an electric hand mixer.) Beat in the egg and vanilla. At a low speed, beat in the dry ingredients until just incorporated then beat in the  ¾ cups white chocolate chips, dried cherries and oats until combined.
  4. Form the dough into 1 1/2-inch balls and arrange them 2 inches apart on 2 large baking sheets (about 6 to 8 balls per sheet). Insert one straw into the center of each dough ball.
  5. Bake for 13 minutes or until cookies are lightly brown.
  6. Let the cookies cool on the baking sheets for 2 minutes before transferring them to a rack to cool completely. If sticks shifted during baking, gently push them 
toward the center of the cookies being careful not to crack them.
  7. Once cookies have cooled, melt ¼ cup white chocolate chips according to package directions. Drizzle cookies with melted white chocolate. Allow cookies to remain on the wire rack until white chocolate sets.

Notes

*Dried cranberries may be substituted

**For a heartier cookie, use old fashioned oats.
