Apple Cinnamon Overnight Oats

Mornings in our household are nothing short of hectic. We are a bunch of sleepyheads so trying to get the girls dressed and out the door on time (not to mention lunchboxes packed when I don’t prep the night ahead) is nothing short of chaotic. Thankfully, make-ahead recipes for breakfast help to neutralize the craziness and gives us a few extra minutes to sit down together for a wholesome meal.

Enter overnight oats–the best make-ahead breafast ever (thanks food blogger friends for helping to elevate this idea)! Sure, instant oatmeal doesn’t take long to cook and if the girls decide they want their overnight oats warm versus cold then we’re still taking a minute or so to heat but all of the measuring, chopping, and just thinking about what to eat saves valuable time in the morning.

Overnight oats can be customized with any of your favorite flavors. I’m a big fan of using apples, cinnamon, peanut butter, cocoa powder, and berries but there are hundreds of delicious flavor combos on the web.

Apple Cinnamon Overnight Oats

Description

Apple Cinnamon Overnight Oats combine heart-healthy oats, ground flaxseed, and walnuts for a delicious make-ahead breakfast.

Ingredients

  • 1 cup old fashioned oats
  • 1 tsp to 1 tbsp ground flaxseed
  • 1 tsp cinnamon
  • 1 cup 1% milk
  • 1 tsp vanilla extract
  • 2 Tbsp chopped walnuts
  • 1/2 cup chopped apples (divided)

Instructions

  1. Combine first 5 ingredients in a bowl, glass or mason jar. Stir until combined. Add half of the walnuts and half of the apple; stir. Refrigerate overnight for 6 to 8 hrs.
  2. When ready to eat, stir in remaining walnuts and apples and stir.
  3. Top with additional vanilla Greek yogurt or peanut butter, if desired.
