My friends at Uncle Ben’s created the concept and have made some fun variations on a pizza rice bowl, a buddha rice bowl and more. I played around with this concept and created a simple portable rice pouch recipe for when you’re on-the-go.

Just stir together cooked chicken, chopped bell peppers, chopped green onions, pineapple chunks and sweet and sour sauce. And while, yes, I know we could make our own sauce, this recipe is all about taking shortcuts. Plus, you can use extra sweet and sour sauce to make Slow Cooker Sweet and Sour Meatballs the next day. Spoon the chicken mixture into a just-cooked microwaveable brown rice pouch and you’re walking rice bowl is done.
